Cartmel chef Simon Rogan has been awarded an MBE, in the 2024 New Year's honour list, for services to the food industry. Here he shares the secrets of what it takes to achieve three coveted Michelin stars. Simon has made Cumbria his home, and his restaurant L'Enclume, is regarded as one of the finest dining establishments in the world.
